Asparagus & Goat Cheese Tart

Whether you’re planning a full brunch or a cozy breakfast in bed, this Asparagus & Goat Cheese Tart is a simple but elegant dish that looks as good as it tastes. Pair this tart with a light mixed greens salad and a glass of chilled white wine or sparkling water with a splash of lemon for a special occasion brunch.

INGREDIENTS

  • 1 sheet of puff pastry, thawed
  • 1 bunch of fresh BC asparagus, trimmed
  • 4 oz (115g) goat cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • 1 teaspoon lemon zest
  • Salt and freshly ground black pepper, to taste
  • 1 Island Gold egg, beaten (for egg wash)
  • METHOD

    Preheat the oven to 400°F (200°C).

    Prepare the puff pastry:

    On a lightly floured surface, roll out the puff pastry to fit your tart pan or desired shape (approximately 25x35 cm).

    Transfer the pastry to a parchment-lined baking sheet.

    Using a sharp knife, score a 1.5 cm border around the edges of the pastry, being careful not to cut all the way through.

    Prick the centre area with a fork to prevent puffing.

    Prepare the filling:

    In a bowl, mix the softened goat cheese with lemon zest, salt, and pepper until smooth.

    Spread the mixture evenly within the scored border of the pastry.

    Assemble the tart:

    Arrange the trimmed asparagus spears over the goat cheese layer, alternating directions for a decorative pattern.

    Drizzle the olive oil over the asparagus.

    Sprinkle the grated Parmesan cheese on top.

    Apply the egg wash:

    Brush the beaten egg along the edges of the pastry border to promote a golden finish.

    Bake:

    Place the tart in the preheated oven and bake for 20-25 minutes, or until the pastry is golden brown and the asparagus is tender.

    Serve:

    Remove from the oven and allow to cool slightly.

    Slice and serve warm or at room temperature.
