These are one of those lunches that looks like more effort than it is. A soft tortilla, a few layers of deli turkey and cheese, rolled up and sliced into bite-sized rounds. Easy for little hands to eat, and easy for you to pack the night before.
INGREDIENTS
- 4 large flour tortillas
- 8 oz (225 g) cream cheese, softened
- 12 slices deli turkey
- 6 slices cheddar (or your cheese of choice)
- 1/2 cup (15 g) shredded lettuce or spinach (optional)
- Mustard or mayo, to taste
METHOD
Lay each tortilla flat and spread an even layer of cream cheese over the whole surface, right to the edges.
Layer turkey and cheese slices evenly across each tortilla, then add lettuce or spinach if using.
Roll each tortilla up tightly, starting from one edge, pressing gently as you go to keep it snug.
Wrap each rolled tortilla in plastic wrap and chill for at least 30 minutes. This makes them much easier to slice cleanly.
Unwrap and slice into 1-inch (2.5 cm) pinwheels, trimming the uneven ends if you like.
Pack in a lunchbox with a cold pack, or serve right away as a snack platter.
